DIY Homemade Red sauce aka pasta sauce

Make your own pasta sauce I say! Say good bye to the store bought ones…

Here is my recipe for homemade pasta sauce! This recipe is great and jammed packed with nutritious vegetables that the kids won’t even know! Plus you can also use this sauce on your pizza bases, pour over grilled chicken, fish or vegetables. Don’t forget you can use half and freeze the rest for another nights dinner… Once you make this sauce you will never buy bottled sauce again!

2 carrots – peeled and crated
(carrots are naturally sweet so it should help with the acidity in the tomatoes)
2 zucchini – grated
1 onion – peeled + chopped into cubes
2 cloves garlic – crushed
4 x  400g cans Organic Diced tomatoes
(I use Aldi’s plus give them a quick blitz so there are no chunks)
1 drop of Oregano Essential Oil
A big handful of basil – roughly chopped
Salt + Pepper to season
Balsamic vinegar –  around a teaspoon
Olive Oil – about 2 tbsp

What’s next?

Prep all your vegies
Then heat your olive oil in a large saucepan
Add onion cook for 2-3 minutes until translucent, then add garlic, carrots & zucchini
Fry all the ingredients for around 3 minutes
Then add your tomatoes, basil, balsamic vinegar + salt & pepper
Bring the tomatoes to the boil then turn the heat to low and simmer for around 30mins
Once you have simmered your sauce add your oregano EO and mix it through
Taste the sauce for season and simmer for another 5 mins
Your sauce is now done!

Tip: Balsamic vinegar works wonders when you are trying to reduce the bitterness  plus the sweetness from the carrots counteracts with the bitterness from acid in the tomatoes! No sugar needed!!!!!!

Check the label: When buying canned tomatoes make sure there is no added sugar/ sugar is not in the ingredients panel
